Peanut Butter Marshmallow Squares



This is a very easy to make treat I learned to make only a couple of years ago.  Strangely it is one I had never even heard of before then.  The kids will love it and all peanut butter lovers.  It is a mix of marshmallows and peanut butter that ends up looking like little pastel stained glass windows.




Ingredients:

1/2 cup unsalted butter
1 cup peanut butter
1 bag of peanut butter chips
1 small bag of fruit flavored mini marshmallows

Directions:

Spray a 9x13 glass casserole dish with cooking spray.
In a large bowl, place butter~peanut butter & peanut butter chips inside

 Place the bowl in a microwave and heat for 1 minute, you can also do this in a pot on the stove.  Remove mixture and stir well, residual heat within the butter and other ingredients will continue to help melt everything together.  Repeat the heating process until everything is just melted and smooth.


Let cool for a minute or two so when you place the mini marshmallows into the mixture, they won't melt.  Letting the mixture cool a bit also allows the marshmallows to float within instead of just sinking to the bottom of the dish.

Add mini marshmallows and mix well.


Pour mixture into the 9x13 dish and spread evenly throughout


Place dish into the refrigerator covered with plastic wrap until firm, 1/2 hour or 1 hr, remove and slice into squares with a sharp knife.


I served mine individually by placing them into lil' muffin cups.

 

You can make this homemade by making your own fresh butter...making your own homemade peanut butter and even making your own marshmallows : )  The peanut butter is easy...and the marshmallows are doable but alittle more time consuming...I have yet to make either of the two, but they are def. on my to do list : )

BAKING TIP....when you are left with empty cups and not enough batter, add a small bit of water to the empty cups to avoid having them burn and discolor.

Just a few yummies to celebrate my favorite holiday.  I also made a lemon poppyseed bundt cake that was moist and super delicious.  Blueberry muffins and the cutest decorated cupcakes that I seemed to have forgotten to get pics of!! Why O Why?? They were the cutest...swirled frostings, with colors of pink, yellow and green with sprinkles to boot, sigh...oh well, they were yummy : D
